安吉白

In 1982, old tea trees were discovered in the district of 安吉 that probably were cultivated over thousand years earlier. The environment is quite cool there, so the plants build less chlorophyll and thus appear lighter. This is why they are called 白葉 , and this is why this tea has 白 in its name even though it is made into a green tea. It has a honey-like aroma and a full cup with decent umami and notes of passion fruit and Gewürztraminer.
